1 holiday ham
1 cup brown sugar
1 cup pineapple juice• ½ cup honey
½ cup Goslings Black Seal Rum
1 cup Goslings Stormy Ginger Beer
4 tbsp butter
2 tbsp Dijon mustard
1 tbsp grainy mustard
1 tbsp Cajun seasoning
½ tsp cinnamon, optional
1. Preheat oven to 325°F. Place ham in a roasting pan and score the surface in a diamond pattern.
2. In a saucepan over medium heat, combine brown sugar, pineapple juice, honey, Goslings Black Seal Rum, and Goslings Stormy Ginger Beer. Bring to a simmer.
3. Stir in butter, Dijon mustard, grainy mustard, Cajun seasoning, and cinnamon if using. Simmer until slightly thickened and glossy.
4. Brush ham generously with glaze.
5. Roast, basting every 20 minutes, until heated through and deeply caramelized.
